This washed Bourbon comes from the El Rejo parcel of La Palestina farm, which represents a collection of small farms in Jaén tended by members of the Alarcón-Coronel family. Perched at 1,950 meters, the highest point of the farm, El Rejo is cultivated under the vision and care of Jose Rivera, founder of Origin Coffee Lab and our partner in Peru who connects us to this exceptional coffee year after year. This lot is a limited harvest from El Rejo’s Bourbon trees. A storied variety that once dominated the coffee trade, over time Bourbon has largely been replaced by higher-yielding cultivars. It remains, however, one of our favorite varieties to feature, and this coffee beautifully illustrates why.

How To Brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting if you are ordering from Intelligentsiacoffee.com.
