Enrique López of Finca Chelín is not afraid to take risks in his relentless pursuit of flavor. When a friend brought him an obscure seed from Indonesia called Solok that Enrique had never heard of, he didn't flinch, planting it in some of the choicest groves on his farm. This tiny lot represents his first harvest of Solok — and the first we know of anywhere in the world outside Indonesia.

Coffee growers generally employ one of two strategies to amplify or multiply the flavors their coffees can produce. One is varietal diversification, introducing new genetic materials whose flavor profiles are different from those already found on the farm. The other is post-harvest processing innovation. At Finca Chelín, a century-old coffee farm perched high in the hills of Oaxaca’s breathtaking Sierra Sur, Enrique López has done both with abandon. This lot features both a new variety — we don’t believe the Solok varietal has ever been grown outside the Indonesian coffee farms where the seed for this lot was collected — and a wildly creative post-harvest process Enrique calls “hydronatural washed.”
