Las Moritas was established in 1988 when José Higinio Gómez and his wife, Aura Libia de Jesús Gómez, purchased their first plot of land. They began by cultivating and selling staple crops such as tomatoes, beans, and corn. Over time, they acquired more land, giving them space to experiment with coffee production. The first coffee seeds planted were Bourbon, a gift from Don Higinio's father. Now, over 30 years later, they are still growing those same staple crops, but coffee and a lush canopy of shade trees now dominate the 70-hectare landscape. The diverse terrain, soil, and microclimates of Las Moritas result in sweet, complex coffees that help anchor both our blends and our single origin menu. This lot was harvested from several parcels of land that comprise the greater Las Moritas farm in San Antonio la Paz. A less commonly explored coffee region of Guatemala just 30 miles outside of the country's capital, the area is part of the rugged Sierra de las Minas mountain range, renowned for its vast deposits of jade and marble that have been mined there for centuries.

How To Brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting if you are ordering from Intelligentsiacoffee.com.
