James Fernández grew up surrounded by coffee, learning the trade from his parents and grandparents. Though curiosity about other crops led him to briefly stray from coffee, he returned to his roots and established his farm, La Laja. Starting with traditional Colombian varieties, James later encountered the Geisha variety, whose unique sensory qualities inspired him. Using the best seedlings he could find, he established his own Geisha plot at La Laja. This lot represents a limited harvest from those first Geisha plants. After being hand-picked in the morning, only the perfectly ripe Geisha cherries were selected and pulped in the afternoon before undergoing a 48-hour fermentation in open-air tanks. The beans were then washed twice and transferred to covered, raised drying beds, where they dried for 11 days. James’s simple yet meticulous approach to processing allows this Geisha's elegant floral notes and delicate sweetness to take center stage.

How To Brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting if you are ordering from Intelligentsiacoffee.com.

    Weigh Coffee 1g of coffee per 18g of water

    Drop In Filter Add filter to equipment
  4. 04.
    Grind Coffee Grind coffee and add to filter
